Does Japan have vegan sushi?

While traditional sushi includes fish or seafood, there are now some sushi restaurants in Japan that also offer plant-based sushi options. These are mostly larger restaurant chains or restaurants that are specialized in vegan food. Traditional sushi places are unlikely to serve vegan or vegetarian options. One vegan sushi option in Japan is 'nigiri-zushi', which is a small ball of rice topped with various vegetables such as avocado, cucumber, or pickled daikon. Others may include rolls made with ingredients like tofu, mushroom, or asparagus. Some sushi restaurants in Japan also offer vegan sushi sets, which typically include a variety of different plant-based sushi options to try.
